Ye let's go with it but drop the mustang-109, 109-yak. I can tell that in case of even pilots the guy flying the stang/yak will always beat the 109. So those rounds would very likely always end in a draw 3-3.

Please no, these are very uneven plane pairs. Spit/109 and zero/sair are the most common and even pairs.

Okay, I guess I have to clarify.

Let's say we have a df between you and me. The match starts of course in this situation:
       (points-kills-deaths)
Viita 0-0-0
Sonic 0-0-0

Lets say that in the first fight I crash to the ground accidentally. This counts as a point for you. In the scoreboard it looks like this:

Viita 0-0-1
Sonic 0-0-0

Actual score is 1-0 for you.

In the second fight  I crash again to the ground and the score looks like this:

Viita 0-0-2
Sonic 0-0-0
Actual score is 2-0 for you

In the third fight I shoot you down. Score now:

Viita 1-1-2
Sonic 0-0-1
Actual score is 2-1 for you

In the fourth fight you crash into the ground. Score looks like this:

Viita 1-1-2
Sonic 0-0-2
Actual score is 2-2 now.

I don't think I have to continue further to prove my point how complicated this might get in the end. I hope that people participating here are gentlemen and admit their losses. You could say the actual score after each fight and see if both players agree with the situation.

Well that's the thing that doesn't work that well on dfs. Imagine you have score of 8-8 and opponent has a score of 7-8 and the actual score is something like 2-2 because of crashing to the ground and each other.

What if the rounds end 1-1? Count the points from each fight then? And who is going to count the points then? It can get complicated if a lot of crashes happen. Also the dogfights between some players can last for a very long time so I'd suggest instead of 5 points you need 3 points to win a round. I'm also okay with zero-corsair, spit-109 and switch but who/what is going to determine which plane pair are we gonna use for each match then?

I'm in but only if you can get over 8 players to sign up and commit in playing in this tournament.

About some basic rules:
the fight:
- Use one line on the map. For example F line. 1 Player starts from F1 and the other one from F8.
- Say 'rdy' when you are in the start point. One of you then says 'go' and you start approaching each other.
- Try to meet around middle. You have to fly about the same altitude. 1 good rule is to keep ground on sight all the time, if you don't see the ground you are too high.
- Pass each other without shooting. After the pass the fight is on. Make sure that both pilots see each other while passing. For example if 1 is way too high return back to starting point and do the pass again.

points:
- Shoot opponent down - win
- You crash on the ground/bomb yourself/crash on something else than opponent without taking opponent out - opponent wins that fight
- You crash into opponent killing both you and the opponent - draw
- You bail - opponent wins that fight automatically

FYI Counter Strike 1.6, Counter Strike Source and Counter Strike Global offensive are totally different games. CS 1.6 was a mod for Half Life while CSS was a mod for HL2 meanwhile CS:GO is totally independent game. You have been served.
